Despite its name, the Veggie Burger with Egg is not only a tasty meat alternative but also a simple and enjoyable recipe to prepare. Packed with essential nutrients, it offers a nutritious and satisfying option for those looking to replace traditional chicken or meat burgers in their diet.

Servings – 4 persons
Yields approximately 10 to 11 pcs.
Ingredients:
Potatoes – 225 gm
Carrots – 225 gm
Onion – 55 gm
Peas – 115 gm
Capsicum – 55 gm
Cayenne Pepper – a pinch
Bread – 30 gm
Egg – 1
Salt – to taste
Oil – 10 ml
Method:
1 ) Boil and mash potatoes.
2 ) Boil and mash carrots and peas.
3 ) Chop onions and capsicum finely.
4 ) Soak bread in water.
5 ) Heat oil. Saute onion and capsicum.
6 ) Add mashed vegetables and bread with moisture squeezed out.
7 ) Add cayenne pepper, salt and beaten egg. Mix well.
8 ) Shape into hamburgers – 5 cm ( 2″ ) in diameter.
9 ) Shallow fry and serve hot with sauce of choice. I have paired them with Italian Herb Mayo
Sauce.
N.B – In case cayenne pepper is not available, you can substitute it with Chilli powder,
Peri-Peri spice etc.
