Ridge gourd is used widely in Indian Cooking. It comes in two variants – smooth & ridged. I got hold of some smooth ones today and decided to turn them into a stuffed masterpiece. In case you are looking for a low-calorie meal then I would recommend Ridge Gourd as a part of your meal plan. It is high in antioxidants and an excellent hypoglycemic. 500gm Ridge gourd
45 gms Groundnut powder
1 teaspoon Aamchur powder
2 tbsp Red chilli powder
Salt – to taste
1 teaspoon Turmeric
4 Garlic cloves
2 pinch Cumin seed
10 gms Cashewnut
1 teaspoon Coriander powder
2tsp oil ( for the stuffing )
1 ) Grind all the above ingredients together with the oil and set aside.
2 ) Slit the Ridge Gourd lengthwise just up to the base, for the stuffing to be in place.
3 ) Add Finely chopped onions ( 2 nos ), Coriander leaves ( few sprigs ) Black Masala ( 1 tbsp ) and mix finely. Stuff the Ridge Gourd with all the ingredients including the grounded masala and set aside.
4 ) Heat 100 ml oil and add stuffed ridge gourd and 50 ml water. Cover it with a lid. Let it cook for 10 mins. Remove from flame and serve with Roti or Rice.
