Back after a binge eating spree on Sunday, I’m usually not in the mood for some serious behind-the-range encounter. And who says, Soup is comforting only in winter? I always have Popeye’s favourite go-to energy booster – Spinach stocked in my pantry.
Spinach soup is a comforting food for all seasons. High in Iron and calcium content and also
one of the highest content of Vitamin K. This recipe is super easy to put on the table and gets
ready in under twenty minutes provided you have the meat or vegetable stock handy in your
kitchen.
Cook Time – 20 minutes
Servings – 4
Ingredients :
Meat Stock / Vegetable Stock – 750 ml
Spinach – 250 gm
Refined flour – 30 gm
Butter – 30 gm
Milk – 300 mo
Salt – to taste
Clove – 2 to 3 pcs
Bay leaf – 1 piece
Star Anise – 1
Cardamom – 2 to 3 pcs
Method :
1 ) Clean and wash the spinach.
2 ) Cook in stock with spices and salt.
3 ) Rub through a sieve when cooked.
4 ) Prepare white sauce using flour, milk and butter.
5 ) Add vegetable puree. Reheat and serve.
Pro tip: Garnish with grated cheese ( preferably Mozzarella ) for that top-notch flavour
